Small-batch sesame oil is a traditional specialty produced using methods such as "washing, roasting, grinding, and heating," all done manually without additives, known as "water extraction." This oil is made using stone mills and water extraction at temperatures below 100°C, a purely physical method of oil extraction. Compared to modern methods like pressing and solvent extraction, this method has the advantage of lower operational temperatures and less loss of nutrients and flavor, resulting in an amber-colored oil with a rich aroma and a long-lasting taste, highly favored by consumers.

Sesame (Sesamum indicum L.) is an annual herb in the sesame family, characterized by hollow stems or those with white pith; the leaves are oval-shaped; flowers are solitary or few in axillary clusters and are white; the sesame capsule is blunt at the base, pointed at the top, with ridges in the middle; sesame seeds are usually flat and oval-shaped, available in four colors; flowering occurs from May to September, and fruiting occurs from August to September.
Sesame, introduced to China by Han envoy Zhang Qian during his mission to the Western Regions, was originally called "Hu Ma" (foreign sesame). The name was later changed to "Zhi Ma" by Zhao Wang Shi Le. Sesame originated in Africa and was introduced to China during the Han Dynasty, where it is now widely grown along the Yellow River and the Yangtze River basins, as well as in provinces such as Henan and Hubei. Sesame thrives in warm, humid environments, is drought-tolerant, cold-resistant, but does not tolerate waterlogging or high humidity. It requires ample sunlight throughout its growth period and prefers loose, well-drained soil. Sesame is typically propagated by sowing.
