Product Overview
Walnut oil is a plant oil extracted from walnut kernels and is used as a cooking oil.
Walnuts have an oil content of up to 65%–70%, the highest among woody oilseeds, earning them the title of "tree oil reserve." The modern extraction techniques produce this new generation walnut oil. Made from high-quality walnuts and using leading international processes, walnut oil is referred to as the "Eastern Olive Oil" on the global market, enjoying the same popularity as olive oil.
Walnut Oil Grade Classification
Walnut oil grades are usually classified by production process and quality:
- First-Grade Walnut Oil: Made from premium walnuts, cold-pressed and refined to produce a high-end edible oil with clear color, pure flavor, and rich nutrients. This is the highest quality walnut oil.
- Second-Grade Walnut Oil: Made from medium-quality walnuts, it is pressed and refined to produce edible oil with a darker color and slightly impure taste, but still retains nutritional value.
- Third-Grade Walnut Oil: Made from lower-quality walnuts, this oil is darker and has a heavier taste with lower nutritional value.
Walnut Oil Production Processes
There are four main methods for producing walnut oil:
- Traditional Physical Pressing: Uses a press to extract oil. This method has minimal equipment, mature processes, and simple operation, making it the most common method for producing edible oil.
- Pre-Pressing and Solvent Extraction: The walnuts are first pressed to extract most of the oil, then the remaining cake is treated with solvents to extract the remaining oil. This method reduces the oil content in the cake to below 1%, improving oil yield and cake quality.
- Water-Based Extraction: Utilizes the differences in affinity between oil and water to separate oil, proteins, and other components.
- Supercritical CO2 Extraction: Compared to traditional methods, this technique yields oil with higher efficiency, fewer impurities, and lighter color. Research also includes microwave extraction and microencapsulation techniques for walnut oil.

Walnut, also known as English Walnut (Juglans regia L.), is a deciduous tree in the walnut family. The tree is shorter with a broad crown; young branches are gray-green and hairless; leaves are oval to elongated; fruit clusters are short; fruits are nearly spherical and hairless; shells are slightly wrinkled with a short tip; partitions are thin with no cavities; inner fruit walls have irregular voids. Flowering occurs in May and fruiting in October. The name "walnut" comes from Li Shizhen's "Compendium of Materia Medica," describing it as "the fruit covered in green skin, resembling a peach, and walnut is its shell."
Walnuts originate from the Eurasian region between the Balkans and southwestern China and are distributed in northern, northwestern, and southern China, commonly cultivated in plains and hilly areas. They prefer fertile, moist sandy loam and are commonly found in deep soil along mountain river valleys.
Walnut kernels are high in oil, suitable for consumption raw or for oil extraction. The wood is solid and a valuable hardwood material. Walnuts are one of the four major nuts worldwide. Medicinally, walnut roots are noted for their insecticidal and detoxifying properties, and walnut kernels are used to warm the lungs and kidneys, relieve constipation, and address tinnitus from kidney deficiency. The walnut flower is typically white, symbolizing "rationality and strategy." Traditional poetry praises the walnut tree for its resilient character.
